Summer Mango Salad

Introduced in the summer of 2007, the Summer Fresh Mango salad is their seasonal mango salsa served over grilled chicken and crisp romaine lettuce all in a crunchy tortilla bowl, drizzled with cilantro-lime vinaigrette.

Qdoba Mexican Grill Copycat Recipe

Grilled Chicken  (see sidebar for recipe)
Mango Salsa  (see sidebar for recipe)
Romaine Lettuce
Flour Tortilla Bowl  (see sidebar for recipe)

Cilantro Lime Vinaigrette:

1/2 cup cider vinegar
2 tablespoons chopped fresh cilantro
1 teaspoon grated lime rind
2 tablespoons lime juice
1 tablespoon honey
1/4 teaspoon salt
1/4 cup olive oil

Whisk together first 6 ingredients; add oil in a slow, steady stream, whisking constantly until smooth. Or put everything into a mason jar with a lid and shake.
